Ozone sterilization is mainly based on the strong oxidizing ability of monoatomic oxygen (O) hydroxyl (OH) produced after decomposition or dissolution in water. Ozone first reacts with the lipid double bonds of cell walls and cell membranes. Enter the cell through the cell wall and cell membrane. Acting on the outer shell lipoprotein and the inner fat content of the confectionery meat changes the permeability of the inner cell membrane, causing the inner cell membrane to leak out, and finally leading to cell lysis and death.
